When ‘Ocean’ Really Means Something

The Hotel Del’s signature restaurant and chef deliver on the experience. OK, let’s be honest, 1500 Ocean has a lot of things going for it. Right out of the hopper, how many restaurants can have the word “ocean” in their name and be literally speaking of their location? “No ma’am, we are right on the ocean. The sand is our sidewalk,” the hostess could say. Next, being situated at the world famous Hotel del Coronado ain’t half bad either. The perpetually-packed resort has a captive audience, many of whom are on expense accounts or honeymoons — and either way, they can splurge at least once on their trip. Third, and most significant, was the decision to bring in Brian Sinnott as chef de cuisine. Sinnott has an awesome life. He need not worry about mundane hotel matters such as room service or banquets. Overseeing the hotel’s signature restaurant is his only responsibility, and what a wonderful job he does.
