Recipe: Mixed Berry Cobbler

 

Mixed berry cobblerWhile in Seattle Washington and shopping at one of my favorite places on earth, Pikes Place Market, I decided to purchase some of their beautiful berries to make a cobbler. This is a wonderful dish to make for your Fourth of July parties or any family get together. Serve warm with vanilla ice cream and enjoy the taste of the Great Northwest in your own backyard!

Ingredients:

3 cps Blackberries
3 cps Blueberries
3 cps Raspberries
1 Lg Lemon
1/2 cps White Sugar + 2 Tbs
3 Tbs Cornstarch
3 Tbs Butter
1 Refrigerated Rolled Piecrust (I like to use Trader Joe’s or Pillsbury, you can also make your own)

Directions:

Preheat oven to 375 degrees.

  1. Remove pie crust from refrigerator and let sit until soft enough to roll out. Rinse and clean berries, place in a large mixing bowl.

2. In a small bowl mix together the sugar and cornstarch saving 2 Tbs of sugar for later use. Sprinkle sugar/cornstarch mixture and the juice of the lemon over the berries careful to remove any seeds, gently toss berries until well coated.

3. Butter a med/Lg baking dish or casserole with about one tablespoon of the softened butter then pour your berry mixture into the baking dish and set aside.

Roll pie crust out onto a smooth flat surface and cut into desired shapes for the top of the cobbler by using a cookie-cutter. There are many designs you can create by using different shapes. Depending on the season I like to cut stars, circles, flowers or simply make a lattice by cutting the dough into strips and weaving them together to place on top of the berries. You can be as creative as you want here.

Decorate the top of the cobbler with your crust and bake in a 375 degree oven for about 50 minutes, remove from oven and brush crust with the remaining butter, sprinkle with remaining sugar and return to oven for another 15-20 minutes or until golden and bubbly.

Remove from oven, let set for 20 minutes or so to cool.

Serve warm with vanilla ice cream, fresh whipped cream and enjoy!

Variations:

There are many toppings you can use for this recipe. Crumbles, Crisps or the traditional biscuit style are all delicious.

Crumbles:

1/2 cup flour

1/2 cup sugar

1/2 cup cold unsalted butter, cut into small pieces

Pinch of Cinnamon if desired

Cut/Mix together flour, sugar and butter until it becomes a crumbly texture. Sprinkle over berry filling and bake.

Crisps:

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup brown sugar

1/2 cup sugar

1/2 cup cold unsalted butter, cut into small pieces

Pinch of salt

Pinch of Cinnamon if desired

Mix oats, flour, sugars and salt in a bowl. Cut butter into the mixture until it becomes a coarse meal like texture and sprinkle evenly over the berries and bake.
