The Calypso Cafe, which used to be just a little kiosk outside the offices near the Coronado Cays Yacht Club has expanded into a full-fledged cafe. They serve an interesting assortment of choices you won’t find in most places (lots of organic choices) and do breakfasts and lunches. We stumbled upon the change a while back and when we stopped in to check on progress yesterday morning the owner was awaiting her final inspection from the Health Department to officially start serving. The actual Grand Opening will be sometime around the 17th-18th, but here’s a shot of the menu, (plus daily specials, like shrimp enchiladas! Yum!).
