Recipe: Bacon Wrapped Potato Poppers

It’s football season and that means family gatherings and lots of delicious appetizers and snacks to enjoy together! These tasty bites are easy to make and delicious. I enjoy them stuffed or on their own. They are a sure bet to keep family and friends satisfied during the game!

These poppers are delicious on their own or stuffed with your favorite fillings below.

Ingredients:

20 baby potatoes, I like to mix golden and red

10 slices peppered bacon, sliced in half

1 Tbs garlic olive oil

Sea salt & fresh ground pepper

Filling Options:

Cream cheese, fresh chives and jalapeño

Goat cheese, fresh chives and jalapeño

Sharp cheddar cheese and jalapeño

Dip:

1 cup sour cream

1/4 cup fresh chives, finely chopped

Pinch fresh ground pepper if desired

Mix sour cream and chives well, season with pepper and serve with the poppers as a dip.

Directions:

Line a sheet pan/cookie sheet with parchment paper or foil, place rack on top of cookie sheet, poppers will bake on-top of the rack. If you don’t have a rack simply bake poppers on a foil lined sheet pan.

Potato Poppers: In a medium size bowl toss potatoes with a bit of garlic oil and salt and pepper to taste. Wrap with bacon, making sure to overlap the bacon, secure bacon to the potato with a toothpick.

Filled Potato Poppers: Carefully cut a whole on the top of each potato, toss potatoes in a bit of garlic olive oil and season with salt and pepper as above. Fill with your desired cheese, a few chopped chives and top with a circular slice of the Jalapeño, wrap in bacon and secure bacon to potato with a toothpick.

Place poppers on rack and place in a preheated oven at 400 degrees for 40-45 minutes, until bacon is crispy and potatoes are tender. Let cool until slightly warm and serve with the sour cream and chive dip.
